
Start by grating the zucchini, preferably with a spiralizer, if you don't have one, use a regular peeler to cut it into ribbons. Optionally, if you don't want to eat them raw, you can submerge them in boiling water to soften them
Then, cut the cherry tomatoes in half and put them in a salad bowl with the zucchini and rocket leaves. Drizzle with olive oil and lemon juice. Season with salt and pepper to taste.
Add the diced feta cheese and the sliced olives and mix everything well.
