Preheat the oven to 175ºC.
Crush the oat flakes.
Mix the flour, yeast, wheat bran, oats and vanilla essence in a bowl.
In another bowl beat the butter at room temperature with the sugar. Once the mixture is white, add the egg and beat a little more.
Mix the contents of the two bowls until a homogeneous mass is obtained.
Stretch the dough between two parchment papers and make a regular dough about 5mm thick. Put it in the freezer for 5 minutes to harden.
Cut with cookie cutters or with a glass and put them in the preheated oven for 12-14 minutes or until golden brown.
