Preheat the oven to 180ºC.
Start by washing the potatoes with cold water. Then dry them with a little paper tower and wrap them in aluminum foil; cook them in the oven until they are tender approximately 40 minutes, let them cool, peel them, and cut them into slices.
While the potatoes are being cooked, cut the onion into slices, remove the seeds from the pepper and cut into strips, and remove the seeds from the tomato and cut into slices.
Combine all the ingredients in a salad bowl and season with oil. Season with salt and pepper.
