Pear vichyssoise

 2 leeks
 2 pears
 1 potato
 1 clove of garlic
 600 ml of homemade vegetable broth
 150 oz of milk
 3 tbsp of extra virgin olive oil (EVOO)
 A pinch of salt

Clean and chop the leeks and garlic. Sauté them in a pot with EVOO for 10 min.

Peel, clean and chop the potato and add it to the pot.

Peel, clean and cut the pears into cubes. Set aside a few cubes to decorate.

Add the diced pear to the pot and sauté for a couple of minutes.

Once sautéed, add the broth, milk and salt. Once it starts to boil, let it cook for about 20 min.

Meanwhile, sauté the leftover pear cubes with a little EVOO in a pan.

After 20 minutes, grind and add the sautéed cubes on top.
