Clean the courgettes, cut off the top and set aside.
Scoop out the inside of the courgettes with a spoon and set aside.
Season the courgettes with salt and pepper and cook them for 4-5 minutes in the microwave at 800W.
Boil the rice as indicated by the manufacturer.
In a saucepan, add a little EVOO and cook the onion at low heat.
Add the prawns and sauté them.
Incorporate the courgette, which we have previously emptied, the mushrooms, season with salt and pepper and cook everything together.
Fill the courgettes with the previous mixture and serve.
