Couscous salad

Couscous is a traditional dish originating from the Mediterranean tribes of North Africa and who formerly inhabited the territories of present-day Morocco, Algeria and Tunisia.

 150 g precooked couscous semolina
 150 ml water
 2 tomatoes
 1 cucumber
 1 carrot
 50 g black olives
 100 g semi-cured cheese
 1 sprig of parsley
 olive oil
 the juice of 1 lemon
 salt and pepper

Put the pre-cooked couscous in a bowl, and add 150ml of boiling water. We remove with a fork. Cover with a clean damp cloth and let it rest for at least 5 minutes.

Wash the tomatoes, red pepper, cucumber and carrot with plenty of water. Next, we cut all these ingredients into cubes. We also cut the cheese in the same way. Chop the parsley. Put the vegetables in the large bowl and mix them with the cheese. Add the couscous, olives, olive oil, parsley and lemon juice. We splash to taste. We remove everything well and let it cool for an hour before serving.

We serve the salad on a tray of various colors, if we have it!
