Peel the onions. Wash the garlic cloves and the pieces of rabbit and dry them. Salt and pepper the rabbit.
In a pan, add a drizzle of olive oil and brown the rabbit on one side. Turn the rabbit over and add the onion and garlic cloves. Sear the other side.
Add the bay leaves and sprinkle with sweet paprika. Add the wine and vinegar, and cook for about 10 minutes.
Cover the pan and let cook for 25 minutes, until the rabbit is tender. Serve.
