Chocolate Soufflé

1Pre-heat the oven to 175ºC.

2“Butter” a straight-sided ovenproof 20 centimeter dish and dust with a little powdered sugar.

3In a saucepan, heat the milk, chocolate, and sugar together until the chocolate melts but do not allow the mixture to boil.

4In the top of a double boiler melt the margarine. Stir in the flour, then add the milk chocolate mixture, and blend well.

5Beat the egg yolks until light, mix part of the milk mixture with the egg yolks, then add the yolk mixture to the rest of the ingredients and cook over boiling water, stirring continuously, until the mixture is thick and smooth.

6Remove from heat and when cool add the vanilla.

7Beat the egg whites until stiff. Fold in the chocolate mixture, pour into the buttered dish; set it in a pan of water and bake for 20 to 30 minutes until the soufflé is well puffed.

8Serve at once, with a sprinkle of powdered sugar, if wished.


1 cup semi skimmed milk

100 g sweet chocolate

4 tbsp sugar

1 tbsp margarine

2 tbsp flour

3 eggs, separated

1/2 tsp vanilla

1 tbsp icing sugar (optional)
