
800 g fresh spinach
50 g diced Serrano ham
40 g pine nuts
80 g raisins
3 tbsp olive oil

Soak raisins covered in warm water. Clean the spinach, remove the bottom stem and gently rinse with water. Drain and chop them. Bring 250ml of water to a boil with a teaspoon of salt in a saucepan and cook the spinach for 10 minutes.

Remove saucepan from heat and drain the spinach with a colander. Brown the diced ham and pine nuts for a minute in a wide frying pan. Add the olive oil and drained raisins and cook for a minute.

Add the spinach, mix well and add a pinch of salt. Season with a pinch of pepper and cook 4 more minutes.

Serve immediately.
