Gazpacho

 3 slices of bread
 ½ cup water
 4 large tomatoes
 1 onion
 2 large cucumbers
 1 tbsp olive oil
 2 green peppers
 ½ garlic clove
 ½ tsp salt
 1 tsp vinegar

Soak the bread in water.

Peel and cut the tomatoes, onion and cucumbers. Remove the seeds and cut the green peppers. Add the chopped vegetables to the soaking bread with the chopped garlic, salt and vinegar.

Puree by squeezing through a strainer or use a blender. Add olive oil to the puree and cool completely.

Set aside 2 tablespoons of each of the cut vegetables, chop very fine and pour over the soup just before serving.
