Preheat the oven to 190ºC.
Start by preparing the filling. Take a medium bowl and mix the cheeses, chives, parsley and thyme. Add the pepper flakes and a good drizzle of extra virgin olive oil.
Then place the phyllo sheets on a flat, dry and clean surface and, with a sharp knife, cut the phyllo sheets into 4 equal strips.
Next, on each strip of dough we spoon 1 and a half tablespoons or so of the filling along the edge that is closest to you and roll up nicely, tucking the sides in.
Finally, with a brush we paint the rolls with olive oil and put them in the oven for 10 minutes on the middle rack. Try to turn them halfway through cooking so that they brown well evenly.
