
5 zucchinis
375 g of Cherry tomatoes
200 g of feta cheese
Juice of 1 lemon
80 g pitted olives
60 ml of extra virgin olive oil
Rocket leaves
Salt, pepper

Start by grating the zucchini, preferably with a spiralizer, if not, cut into ribbons with a regular peeler. Optionally, if you don't want to eat them raw, they can be submerged in boiling water to make them softer.

Then, cut the Cherry tomatoes in half and put them in a salad bowl with the zucchini and rocket leaves. Pour in the olive oil and lemon juice. Season.

Add the diced feta cheese and the sliced olives and mix everything well.
