
125 ml of extra virgin olive oil
3 eggs
100 g sugar
1 tsp of honey
150 g of flour
1/2 sachet of yeast
1 lemon

Preheat the oven to 220°C.

Then, wash the lemon and finely grate the skin. Set aside.

Beat the eggs with the sugar, a pinch of salt and the honey. Add the flour, yeast, olive oil and lemon zest. Mix again.

Fill the muffin molds halfway and bake them for 5 min. After that time, we lower the temperature to 200ºC and let them continue cooking for another 5 minutes.

Remove from the oven and place them, preferably, on a rack to cool faster.
