Almond panellets

 500 g of ground almonds
 500 g sugar
 100 g of cooked sweet potato
 75 g egg whites
 600 g of broken almonds
 3 eggs

Make a thin dough by mixing and working the ingredients well. Let it rest in the fridge for a minimum of 24 hours, wrapped in a damp cloth.

Make marzipan balls of about 20 g each in an oval shape, coat with egg and stick a finely cut almond, pressing it lightly on top.

Place them on a tray with parchment paper greased with oil and introduce it in the oven at 230-250º for about 10 minutes, until they are golden brown.
