150 g of sugar
60 g of icing sugar
80 g of toasted hazelnuts
450 g of cherries

Preheat the oven to 100-110ºC.

Start by beating the egg whites until stiff. Add the sugar little by little and mix carefully with a rubber spatula. Then add the icing sugar and hazelnuts. Mix everything well.

Next, line a baking tray with parchment paper and spread the meringue. Put the tray in the oven for approximately 60 minutes, take it out and let it cool.

Just before serving, cook the cherries, with or without pits, in a pan with a little sugar and 4-5 tablespoons of water to caramelize them. We spread them over the meringue and serve.
