
1 whole chicken, gutted and cleaned
3 l of water
2 onions
3 carrots
1 leek
3 branches of green celery
1 bay leaf
36 large galets
300 g of minced mixed meat

To obtain a clean broth, we pour and cover the chicken in a pot with cold water. Cover the pot and let the water boil for a couple of minutes. Remove from the heat, strain the meat and wash it with cold water.

Peel the pumpkin, carrots and onion. Cut the leek in two.

Put the 3 L of water in a pot and add the clean chicken and vegetables. Salt and bring to a boil over low heat for approximately 2 hours.

Fill the raw galets with the minced meat.

Strain the broth and boil it in a saucepan with the stuffed pasta until it is done over low heat.
