{"id":911,"date":"2015-11-23T02:13:15","date_gmt":"2015-11-23T02:13:15","guid":{"rendered":"http:\/\/dietamediterranea.com\/en\/?post_type=cp_recipe&#038;p=911"},"modified":"2017-12-11T15:36:07","modified_gmt":"2017-12-11T15:36:07","slug":"prune-tagine","status":"publish","type":"cp_recipe","link":"https:\/\/dietamediterranea.com\/en\/recipes\/prune-tagine\/","title":{"rendered":"Prune Tagine"},"content":{"rendered":"<\/p>\n<p>4-6 people<\/p>\n<p>800 g lamb<br \/>\n\t\t\t\t\t\t400 g prunes<br \/>\n\t\t\t\t\t\t200 g almonds<br \/>\n\t\t\t\t\t\t2 tbsp olive oil<br \/>\n\t\t\t\t\t\t1  sachet of saffron powder<br \/>\n\t\t\t\t\t\t2 tbsp butter<br \/>\n\t\t\t\t\t\t4 tbsp white sugar<br \/>\n\t\t\t\t\t\t1 tbsp honey<br \/>\n\t\t\t\t\t\t1 tsp ground cinnamon<br \/>\n\t\t\t\t\t\t2 tsp sesame seeds<br \/>\n\t\t\t\t\t\t1\/2 tsp ground ginger<br \/>\n\t\t\t\t\t\t1\/2 tsp ground nutmeg<br \/>\n\t\t\t\t\t\t2  bay leaves<br \/>\n\t\t\t\t\t\t  pepper<br \/>\n\t\t\t\t\t\t  salt\n\t\t\t\t\t\t<\/p>\n<p>Cut meat into cubes the same size. Let the prunes soak in a bowl of warm water for 15 minutes. Dilute the saffron with 125 ml of water and 2 tablespoons of olive oil. Heat the butter in a casserole (or tagine) and brown the meat cubes on all sides for 5 minutes over high heat. Season with salt, ginger, pepper and nutmeg, and add the saffron diluted in water and 2 bay leaves.<br \/>\nPour 250ml of warm water, cover and let simmer for 25 minutes.<br \/>\nMeanwhile, drain the prunes and arrange them in a bowl with the almonds, sugar, honey and \u00bd teaspoon cinnamon. Add 205ml of hot water and mix well.<br \/>\nPlace the preparation in the casserole and cook them meat 8 minutes.<br \/>\nTop with sesame seeds, \u00bd teaspoon cinnamon and set aside the tagine for 10 minutes before serving.\n<\/p>\n<p>Tagine is the name given to the characteristic clay pot with a cone-shaped lid that collects steam from cooking.
