{"id":4416,"date":"2017-11-11T09:42:13","date_gmt":"2017-11-11T09:42:13","guid":{"rendered":"https:\/\/dietamediterranea.com\/?post_type=cp_recipe&#038;p=4416"},"modified":"2017-12-12T11:37:59","modified_gmt":"2017-12-12T11:37:59","slug":"beans-with-mussels","status":"publish","type":"cp_recipe","link":"https:\/\/dietamediterranea.com\/en\/recipes\/beans-with-mussels\/","title":{"rendered":"Beans with Mussels"},"content":{"rendered":"<\/p>\n<p>serves 4<\/p>\n<p>350 g white beans<br \/>\n1  garlic clove<br \/>\n1  basil leaf<br \/>\n1\/2  onion, with 8 or 10 cloves poked in it<br \/>\n2  parsley sprigs<br \/>\n500 g mussels<br \/>\n1 tbsp olive oil<br \/>\n100 g onion<br \/>\n2  garlic cloves<br \/>\n250 g ripe tomatoes<br \/>\n1  basil leaf<br \/>\n1 tbsp white wine<br \/>\n20 g flour<br \/>\n6  parsley sprigs<br \/>\n1  chilli pepper<br \/>\n10  saffron strands<br \/>\n250 mg water<br \/>\n  salt\n<\/p>\n<p>Peel the tomatoes and crush them in a blender. Wash the parsley, remove the stems and finely chop the leaves. Soak the beans in cold water. Clean the mussels and wash them. Crush the saffron with a little salt in the mortar.<br \/>\nCook the beans covered in water. When they break to boil, froth and add the spiked onion with cloves, garlic, laurel and parsley. Cook over low heat so they do not break until tender.<br \/>\nSaut\u00e9 de garlic in the olive oil and once saut\u00e9ed, add the onion. Continue saut\u00e9ing over low heat for approximately 15 minutes.<br \/>\nAdd the mussels, add the flour and saut\u00e9 a little. Add the wine and the chilli pepper. Saut\u00e9 1 minute. Pour the tomato and cook 5 more minutes.<br \/>\nAdd the water, bay leaf, saffron, chopped parsley and bring to a boil with the container covered until the mussels open. Leave the mussels in their shell.<br \/>\nAdd the mussels with the beans and cook everything for 5 minutes.
