{"id":3659,"date":"2017-05-20T09:09:00","date_gmt":"2017-05-20T09:09:00","guid":{"rendered":"https:\/\/dietamediterranea.com\/?post_type=cp_recipe&#038;p=3659\/"},"modified":"2017-12-11T00:01:18","modified_gmt":"2017-12-11T00:01:18","slug":"zucchini-omelet","status":"publish","type":"cp_recipe","link":"https:\/\/dietamediterranea.com\/en\/recipes\/zucchini-omelet\/","title":{"rendered":"Zucchini Omelet"},"content":{"rendered":"<\/p>\n<p>serves 4<\/p>\n<p>2 tbsp olive oil<br \/>\n\t\t\t\t\t\t4-5  zucchinis<br \/>\n\t\t\t\t\t\t1 tbsp finely chopped parsley<br \/>\n\t\t\t\t\t\t1  green pepper, deseeded and finely chopped<br \/>\n\t\t\t\t\t\t1  small tomato, peeled and finely chopped<br \/>\n\t\t\t\t\t\t4  eggs, well beaten<br \/>\n\t\t\t\t\t\t  salt and pepper\n\t\t\t\t\t\t<\/p>\n<p>Heat the olive oil in a skillet, cut the zucchini into slices, without peeling, and brown.<br \/>\nAdd the parsley, the green pepper and the tomato, cook and stir for 1 minute or 2, then add the eggs.<br \/>\nSeason to taste and make the omelet, first on one side and then the other.<br \/>\nPut on a preheated dish and serve immediately.
