{"id":3512,"date":"2017-04-29T08:16:49","date_gmt":"2017-04-29T08:16:49","guid":{"rendered":"https:\/\/dietamediterranea.com\/?post_type=cp_recipe&#038;p=3512\/"},"modified":"2017-12-12T09:26:06","modified_gmt":"2017-12-12T09:26:06","slug":"fine-noodles-with-clams","status":"publish","type":"cp_recipe","link":"https:\/\/dietamediterranea.com\/en\/recipes\/fine-noodles-with-clams\/","title":{"rendered":"Fine noodles with clams"},"content":{"rendered":"<\/p>\n<p>serves 4-6<\/p>\n<p>2  garlic cloves, peeled<br \/>\n\t\t\t\t\t\t  clam cooking liquid<br \/>\n\t\t\t\t\t\t  between 150 and 200 g of clam meat, cut if the clams are large<br \/>\n\t\t\t\t\t\t  salt, if necessary<br \/>\n\t\t\t\t\t\t3 tbsp olive oil<br \/>\n\t\t\t\t\t\t  a good pinch of fresh black pepper<br \/>\n\t\t\t\t\t\t400 g fine noodles (tagliatelle) or spaghetti or other fine pasta<br \/>\n\t\t\t\t\t\t1 tbsp finely chopped parsley or 3 or 4 leaves of basil or mint, finely chopped\n\t\t\t\t\t\t<\/p>\n<p>Brown the garlic with the olive oil, add the clam cooking liquid (half a cup is enough for almost all tastes), clams and anchovies. Stir, add the pepper, and, if necessary, salt to taste.<br \/>\nMeanwhile, boil the pasta as usual, drain and move to a preheated saucepan.<br \/>\nAdd the hot clam sauce and the herbs, stir and serve right away. Italian think it would be a sin to add cheese to this dish, or any pasta dishes with fish for that matter.<\/p>\n<p>Get enough clams in a shell to have between 150 and 200 g (almost a full cup) of meat. Clean the shells with a hard brush before putting them in a pot with a cup of boiling water and a tablespoon of olive oil. When the shells are open, pour the pot into a strainer on a dish to keep the liquid. Remove the clams from the shells and set aside.
