{"id":3464,"date":"2017-04-18T08:35:03","date_gmt":"2017-04-18T08:35:03","guid":{"rendered":"https:\/\/dietamediterranea.com\/?post_type=cp_recipe&#038;p=3464\/"},"modified":"2017-12-10T15:14:50","modified_gmt":"2017-12-10T15:14:50","slug":"rabbit-country-style","status":"publish","type":"cp_recipe","link":"https:\/\/dietamediterranea.com\/en\/recipes\/rabbit-country-style\/","title":{"rendered":"Rabbit Country Style"},"content":{"rendered":"<\/p>\n<p>serves 4-5<\/p>\n<p>1  rabbit (about 1.2 kg)<br \/>\n\t\t\t\t\t\t1\/4 cup flour<br \/>\n\t\t\t\t\t\t2 tbsp butter<br \/>\n\t\t\t\t\t\t2 tbsp olive oil<br \/>\n\t\t\t\t\t\t1\/4  dry white wine<br \/>\n\t\t\t\t\t\t1  medium onion, finely chopped<br \/>\n\t\t\t\t\t\t1\/4 cup finely chopped parsley<br \/>\n\t\t\t\t\t\t2  whole cloves or a pinch of ground cloves<br \/>\n\t\t\t\t\t\t1\/2  bay leaf<br \/>\n\t\t\t\t\t\t  salt and pepper<br \/>\n\t\t\t\t\t\t1 cup water<br \/>\n\t\t\t\t\t\t  Optional: a few fresh or dried mushrooms\n\t\t\t\t\t\t<\/p>\n<p>Cut the rabbit into large serving pieces and water, then brown with butter and olive oil in a heavy skillet or casserole (provided with a tightly fitting lid).<br \/>\nAdd the wine, onion, parsley, cloves, bay leaf, salt and pepper: cook until the liquor has been reduced to half.<br \/>\nAdd a cup of water, cover tightly, and cook over low heat until the rabbit is tender (40 to 60 minutes).<br \/>\nIn Italy, a few fresh or dry mushrooms are often added during cooking.
