Variations are found all over the Mediterranean region. It is served with fried or boiled fish.<\/p>\n<p>makes about 1 1\/2 cups<\/p>\n<p>1  onion, chopped<br \/>\n\t\t\t\t\t\t2 tbsp olive oil<br \/>\n\t\t\t\t\t\t1 tbsp flour<br \/>\n\t\t\t\t\t\t1\/2 cup dry red wine<br \/>\n\t\t\t\t\t\t1\/2 cup boiling water<br \/>\n\t\t\t\t\t\t1\/4 tsp thyme<br \/>\n\t\t\t\t\t\t1  bay leaf<br \/>\n\t\t\t\t\t\t1\/4 cup chopped parsley<br \/>\n\t\t\t\t\t\t tbsp tomato paste<br \/>\n\t\t\t\t\t\t2  garlic cloves, minced<br \/>\n\t\t\t\t\t\t  salt, pepper<br \/>\n\t\t\t\t\t\t2 tbsp capers<br \/>\n\t\t\t\t\t\t10-12  ripe olives, pitted\n\t\t\t\t\t\t<\/p>\n<p>Cook the onion in olive oil until it is soft; stir in the flour and then add the wine and a half a cup of boiling water.<br \/>\nAdd the herbs, the tomato paste, and the garlic; season with salt and pepper, and simmer until the sauce is thick and the flavours well blended.<br \/>\nAdd the capers and olives and serve to accompany fried or boiled fish.<\/p>\n","protected":false},"author":2,"featured_media":2994,"comment_status":"closed","ping_status":"closed","template":"","recipe_category":[],"class_list":["post-2998","cp_recipe","type-cp_recipe","status-publish","has-post-thumbnail"],"_links":{"self":[{"href":"https:\/\/dietamediterranea.com\/en\/wp-json\/wp\/v2\/cooked_recipe\/2998\/"}],"collection":[{"href":"https:\/\/dietamediterranea.com\/en\/wp-json\/wp\/v2\/cooked_recipe\/"}],"about":[{"href":"https:\/\/dietamediterranea.com\/en\/wp-json\/wp\/v2\/types\/cp_recipe\/"}],"author":[{"embeddable":true,"href":"https:\/\/dietamediterranea.com\/en\/wp-json\/wp\/v2\/users\/2\/"}],"replies":[{"embeddable":true,"href":"https:\/\/dietamediterranea.com\/en\/wp-json\/wp\/v2\/comments\/?post=2998"}],"wp:featuredmedia":[{"embeddable":true,"href":"https:\/\/dietamediterranea.com\/en\/wp-json\/wp\/v2\/media\/2994\/"}],"wp:attachment":[{"href":"https:\/\/dietamediterranea.com\/en\/wp-json\/wp\/v2\/media\/?parent=2998"}],"wp:term":[{"taxonomy":"cp_recipe_category","embeddable":true,"href":"https:\/\/dietamediterranea.com\/en\/wp-json\/wp\/v2\/recipe_category\/?post=2998"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
