Cyma, described by Pliny, was not unlike Brussels sprouts, and the Romans considered it very healthful, along with other kinds of cabbage which they served in a number of ways, both raw and cooked.<\/span><\/p>\n<p>serves 6<\/p>\n<p>400 g Brussels sprouts<br \/>\n\t\t\t\t\t\t1 cup white sauce*<br \/>\n\t\t\t\t\t\t  a pinch of nutmeg<br \/>\n\t\t\t\t\t\t  juice of 1 lemon<br \/>\n\t\t\t\t\t\t2 tbsp gruyere or parmesan cheese<br \/>\n\t\t\t\t\t\t1\/4 cup pine nuts (optional)\n\t\t\t\t\t\t<\/p>\n<p>Cook the sprouts in salted water until tender, 10 to 15 minutes and drain them well.<br \/>\n\t\t\t\t\t\tPrepare the white sauce, season it with nutmeg, lemon juice, and grated cheese.
