{"id":2594,"date":"2016-11-13T11:45:12","date_gmt":"2016-11-13T11:45:12","guid":{"rendered":"http:\/\/dietamediterranea.com\/en\/?post_type=cp_recipe&#038;p=2594"},"modified":"2017-12-09T16:36:40","modified_gmt":"2017-12-09T16:36:40","slug":"pilar-with-curried-fish","status":"publish","type":"cp_recipe","link":"https:\/\/dietamediterranea.com\/en\/recipes\/pilar-with-curried-fish\/","title":{"rendered":"Pilar with Curried Fish"},"content":{"rendered":"<\/p>\n<p>4<\/p>\n<p>1 1\/2 cups rice<br \/>\n\t\t\t\t\t\t3 cups water<br \/>\n\t\t\t\t\t\t1  small onion, chopped<br \/>\n\t\t\t\t\t\t2 tbsp olive oil<br \/>\n\t\t\t\t\t\t2 tbsp flour<br \/>\n\t\t\t\t\t\t1 tbsp curry powder, or to taste<br \/>\n\t\t\t\t\t\t  salt<br \/>\n\t\t\t\t\t\t1\/2 cup hot water<br \/>\n\t\t\t\t\t\t400 g codfish fillets (or other firm white-meated fish), cut in small pieces\n\t\t\t\t\t\t<\/p>\n<p>Cook the rice in 3 cups of salted water in a heavy covered pan or a double boiler until tender and the water is all absorbed, 15 to 20 minutes.<br \/>\nMeanwhile, cook the onion in olive oil over moderate heat until soft. Mix the flour, curry powder, and salt, stir the mixture into the oil, and add 1 \u00bd cup hot water; cook and stir until thickened. Add the fish, cover, and continue to cook until the fish is done but still firm \u2013 about 10 minutes.<br \/>\nOil a ring mold, pack the cooked rice into it, and turn it out onto a serving plate.
