Traditionally, farmers would always hunt whenever they could and their wives would raise chickens and often rabbits too. These habits still exists, although hunting for domestic consumption is increasingly scarce. Farmers still raise chickens, but they are no longer the main suppliers of eggs and chickens, chicken factories have revolutionized the market. In any case, everyone agrees that chickens, as before, feeding at the doors of houses are better. Their flesh is firmer, with its dark yellow fat because of its high content in carotenes, a difference that is very easily noticed. Today supermarkets offer a nicely packaged chicken that is much cheaper than that “scrawny bird that you had to pluck and wash”; chicken are no longer a luxury item for special occasions, they are accessible for everyone and can been cooked in many ways.

serves 6

1 (2 kg approx.) roasting chicken, with giblets
2 cups water

      2 tbsp olive oil
1 onion, chopped
1 garlic clove, minced (optional)
1/4 cup slivered almonds
1/4 cup white raisins or currants
1/4 cup rice
3-4 small pieces of lemon rind (optional)
salt, pepper

["post-2509","cp_recipe","type-cp_recipe","status-publish","has-post-thumbnail
