Apart from the basic broth or stew, the ingredients are usually bought especially for the soup, but preference is given to vegetables from the home garden or what is available in the kitchen, so the recipe is improvised. Formerly, in every kitchen there used to be the habit of cooking meat, poultry and fish broths; so all bones, heads, necks, legs and every edible part were kept for making soup. All these products were the base of Mediterranean soups. Now, we increasingly rely on dehydrated concentrates sold in powders or tablets.<\/p>\n<p>serves 4<\/p>\n<p>1\/2 cup green peas<br \/>\n\t\t\t\t\t\t2  carrots, diced<br \/>\n\t\t\t\t\t\t2 cups canned navy beans, drained<br \/>\n\t\t\t\t\t\t1\/2 cup green beans, chopped<br \/>\n\t\t\t\t\t\t2 tbsp flour<br \/>\n\t\t\t\t\t\t2 tbsp olive oil<br \/>\n\t\t\t\t\t\t1 liter 2 per cent milk<br \/>\n\t\t\t\t\t\t  salt<br \/>\n\t\t\t\t\t\t  paprika<br \/>\n\t\t\t\t\t\t  chopped parsley\n\t\t\t\t\t\t<\/p>\n<p>In a minimum amount of water cook the peas until half done (10 to 20 minutes depending on maturity).<br \/>\nAdd the carrots and both kinds of beans and continue cooking until the carrots are very soft (another 15 to 25 minutes, adding only as much water as is needed).<br \/>\nStrain, saving the vegetable broth, and pass the vegetables through a fine sieve or a food mill or mix in a blender.<br \/>\nMix the flour with a little cold water, then mix in the olive oil and add the roux and the vegetable broth to the milk.<br \/>\nHeat, add the vegetable pur\u00e9e, salt to taste, and simmer for several minutes before serving.<br \/>\nIf wished, add a sprinkle of paprika or parsley to each plate as it is served.<\/p>\n","protected":false},"author":2,"featured_media":2472,"comment_status":"closed","ping_status":"closed","template":"","recipe_category":[],"class_list":["post-2479","cp_recipe","type-cp_recipe","status-publish","has-post-thumbnail"],"_links":{"self":[{"href":"https:\/\/dietamediterranea.com\/en\/wp-json\/wp\/v2\/cooked_recipe\/2479\/"}],"collection":[{"href":"https:\/\/dietamediterranea.com\/en\/wp-json\/wp\/v2\/cooked_recipe\/"}],"about":[{"href":"https:\/\/dietamediterranea.com\/en\/wp-json\/wp\/v2\/types\/cp_recipe\/"}],"author":[{"embeddable":true,"href":"https:\/\/dietamediterranea.com\/en\/wp-json\/wp\/v2\/users\/2\/"}],"replies":[{"embeddable":true,"href":"https:\/\/dietamediterranea.com\/en\/wp-json\/wp\/v2\/comments\/?post=2479"}],"wp:featuredmedia":[{"embeddable":true,"href":"https:\/\/dietamediterranea.com\/en\/wp-json\/wp\/v2\/media\/2472\/"}],"wp:attachment":[{"href":"https:\/\/dietamediterranea.com\/en\/wp-json\/wp\/v2\/media\/?parent=2479"}],"wp:term":[{"taxonomy":"cp_recipe_category","embeddable":true,"href":"https:\/\/dietamediterranea.com\/en\/wp-json\/wp\/v2\/recipe_category\/?post=2479"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
