{"id":2362,"date":"2016-10-01T10:04:31","date_gmt":"2016-10-01T10:04:31","guid":{"rendered":"http:\/\/dietamediterranea.com\/en\/?post_type=cp_recipe&#038;p=2362"},"modified":"2017-12-11T10:18:22","modified_gmt":"2017-12-11T10:18:22","slug":"crepes-suzette","status":"publish","type":"cp_recipe","link":"https:\/\/dietamediterranea.com\/en\/recipes\/crepes-suzette\/","title":{"rendered":"Crepes Suzette"},"content":{"rendered":"<\/p>\n<p>serves 10<\/p>\n<p>1 cup flour<br \/>\n\t\t\t\t\t\t1\/4 cup powdered sugar<br \/>\n\t\t\t\t\t\t1\/2 tsp salt<br \/>\n\t\t\t\t\t\t2  eggs<br \/>\n\t\t\t\t\t\t2 tbsp oil<\/p>\n<p>\t\t\t\t\t\t  grated rind 1\/2 lemon<br \/>\n\t\t\t\t\t\t  grated rind and juice 2 oranges<br \/>\n\t\t\t\t\t\t2 tbsp sugar<br \/>\n\t\t\t\t\t\t2 tbsp powdered sugar<br \/>\n\t\t\t\t\t\t2 tbsp Cura\u00e7ao, Cointreau or brandy\n\t\t\t\t\t\t<\/p>\n<p>Sift together flour, sugar, and salt. Combine eggs and milk; add half of this mixture to the dry ingredients and beat until smooth. Gradually beat in the rest of the egg-milk mixture.<br \/>\n\t\t\t\t\t\tHeat a 10-12 cm skillet until a drop of water sizzles on it. Brush with oil, and pour in about 2 tablespoons of the batter, enough just to cover the bottom of the skillet when it has been tilted from side to side. The cakes must be very thin. Fry the crepe over moderate heat until brown on one side (about 1 minute), turn, brown the other side. Roll up the crepe and place it on a platter in a 150\u00baC oven to keep warm. Repeat until all the batter has been used, brushing the skillet with oil each time before the batter is added.<br \/>\n\t\t\t\t\t\tFor the sauce<br \/>\n\t\t\t\t\t\tCombine the grated lemon and orange rinds and the orange juice in a small saucepan with the sugar and powdered sugar; bring to a boil. Add the liquor, pour this hot sauce over the crepes, touch with a lighted match, and carry, flaming, to the table.
