{"id":2251,"date":"2016-09-09T12:59:33","date_gmt":"2016-09-09T12:59:33","guid":{"rendered":"http:\/\/dietamediterranea.com\/en\/?post_type=cp_recipe&#038;p=2251"},"modified":"2017-12-10T13:22:50","modified_gmt":"2017-12-10T13:22:50","slug":"sicilian-meat-roll","status":"publish","type":"cp_recipe","link":"https:\/\/dietamediterranea.com\/en\/recipes\/sicilian-meat-roll\/","title":{"rendered":"Sicilian Meat Roll"},"content":{"rendered":"<\/p>\n<p>4-6 servings<\/p>\n<p>400 g lean veal round, rump, or lean beef flank steak, cut 1 or 2 cm thick<br \/>\n\t\t\t\t\t\t5  slices of bread, crumbled<br \/>\n\t\t\t\t\t\t2  eggs<br \/>\n\t\t\t\t\t\t2 tbsp chopped parsley<br \/>\n\t\t\t\t\t\t2 tbsp grated Parmesan cheese<br \/>\n\t\t\t\t\t\t  salt, pepper<br \/>\n\t\t\t\t\t\t1  sausage, cooked and cut into bits<br \/>\n\t\t\t\t\t\t50 g Scamorza cheese, coarsely grated<br \/>\n\t\t\t\t\t\t1\/4 cup olive oil<br \/>\n\t\t\t\t\t\t2  onions, chopped<br \/>\n\t\t\t\t\t\t1  garlic clove, minced<br \/>\n\t\t\t\t\t\t1  bay leaf<br \/>\n\t\t\t\t\t\t1 cup dry red wine<br \/>\n\t\t\t\t\t\t1  can round peeled tomatoes\n\t\t\t\t\t\t<\/p>\n<p>Trim off any exterior fat from the steak and pound it to flatten and tenderize the meat.<br \/>\nMix bread crumbs, eggs, parsley, and Parmesan cheese, season with salt and pepper, and spread on the meat.<br \/>\nDistribute the sausage and Scamorza pieces over the filling and roll up the steak, tying it with string. In a skillet with a lid, or flameproof casserole, heat the oil.<br \/>\nFirst brown the meat roll on all sides, remove it to a plate; to the skillet add onions, garlic, bay leaf, wine and tomato.
