{"id":2013,"date":"2016-07-24T08:16:45","date_gmt":"2016-07-24T08:16:45","guid":{"rendered":"http:\/\/dietamediterranea.com\/en\/?post_type=cp_recipe&#038;p=2013"},"modified":"2017-12-12T02:33:40","modified_gmt":"2017-12-12T02:33:40","slug":"lobster-paella","status":"publish","type":"cp_recipe","link":"https:\/\/dietamediterranea.com\/en\/recipes\/lobster-paella\/","title":{"rendered":"Lobster Paella"},"content":{"rendered":"<\/p>\n<p>serves 4<\/p>\n<p>  (43 cm paella and a gas diffuser)<br \/>\n\t\t\t\t\t\t300 g &#8220;bomba&#8221; rice<br \/>\n\t\t\t\t\t\t2  lobsters (cut lengthwise<br \/>\n\t\t\t\t\t\t  fish broth, preprared or homemade (3 parts broth for 1 part rice)<br \/>\n\t\t\t\t\t\t2  tomatoes<br \/>\n\t\t\t\t\t\t4  garlic cloves<br \/>\n\t\t\t\t\t\t  saffron<br \/>\n\t\t\t\t\t\t  paprika<br \/>\n\t\t\t\t\t\t1 1\/2 cup extra virgin olive oil<br \/>\n\t\t\t\t\t\t  salt<\/p>\n<p>\t\t\t\t\t\t1 1\/2 liter water<br \/>\n\t\t\t\t\t\t1  rockfish<br \/>\n\t\t\t\t\t\t2  mantis shtrimp or crabs<br \/>\n\t\t\t\t\t\t1  hake head<br \/>\n\t\t\t\t\t\t1\/2  onion<br \/>\n\t\t\t\t\t\t1  sprig of celery\n\t\t\t\t\t\t<\/p>\n<p>For the fish broth<br \/>\n\t\t\t\t\t\tWash all the ingredients and boil for 20 minutes in a saucepan. Add salt. Strain once cooked. Save the remaining broth for cooking other dishes.<br \/>\n\t\t\t\t\t\tFor the paella<br \/>\n\t\t\t\t\t\tWash and drain well the lobsters. Saute in a pan 2 to 3 minutes on each side (until it turns bright red) shell side first, and then turn over. Set aside on a plate.<br \/>\n\t\t\t\t\t\tSaut\u00e9 the crushed tomatoes with garlic in the same oil as the lobsters for 10 minutes, add the rice and saute about 3 minutes. Add salt.<br \/>\n\t\t\t\t\t\tAdd the boiling fish broth (3 parts broth 1 rice). Add saffron and paprika.<br \/>\n\t\t\t\t\t\tCook for 5 minutes on medium-high heat, reduce and  add the lobsters.
