{"id":1547,"date":"2016-04-11T08:13:16","date_gmt":"2016-04-11T08:13:16","guid":{"rendered":"http:\/\/dietamediterranea.com\/en\/?post_type=cp_recipe&#038;p=1547"},"modified":"2017-12-11T17:48:50","modified_gmt":"2017-12-11T17:48:50","slug":"minestrone-soup","status":"publish","type":"cp_recipe","link":"https:\/\/dietamediterranea.com\/en\/recipes\/minestrone-soup\/","title":{"rendered":"Minestrone Soup"},"content":{"rendered":"<\/p>\n<p>4 servings<\/p>\n<p>\n\t\t\t\t\t\t80 g white beans (soak the night before), optional<br \/>\n\t\t\t\t\t\t1  onion and a half<br \/>\n\t\t\t\t\t\t4  garlic cloves<br \/>\n\t\t\t\t\t\t1  small yellow turnip or rutabaga<br \/>\n\t\t\t\t\t\t1  carrot<br \/>\n\t\t\t\t\t\t100 g Swiss chard or spinach<br \/>\n\t\t\t\t\t\t1\/2  small zucchini<br \/>\n\t\t\t\t\t\t2  celery stalks<br \/>\n\t\t\t\t\t\t100 g fine green beans<br \/>\n\t\t\t\t\t\t200 g cauliflower<br \/>\n\t\t\t\t\t\t2  tomatoes<br \/>\n\t\t\t\t\t\t1 liter vegetable broth, homemade or prepared, or frozen broth from boiled vegetables (you can also use chicken broth instead of vegetable broth)<br \/>\n\t\t\t\t\t\t2  bay leaves<br \/>\n\t\t\t\t\t\t  parsley<br \/>\n\t\t\t\t\t\t  black pepper<br \/>\n\t\t\t\t\t\t  rosemary<br \/>\n\t\t\t\t\t\t  basil<br \/>\n\t\t\t\t\t\t4 tbsp grated Parmesan and a 20g slice<br \/>\n\t\t\t\t\t\t1  small cup of extra virgin olive oil<br \/>\n\t\t\t\t\t\t  salt<\/p>\n<p>\t\t\t\t\t\t1  onion<br \/>\n\t\t\t\t\t\t1  turnip<br \/>\n\t\t\t\t\t\t1  carrot<br \/>\n\t\t\t\t\t\t2  sprigs of celery<br \/>\n\t\t\t\t\t\t1  very ripe tomato\n\t\t\t\t\t\t<\/p>\n<p>For the vegetable broth<br \/>\n\t\t\t\t\t\tPut one liter of water, all the washed and coarsely chopped vegetables in a pressure cooker. Add salt.<br \/>\n\t\t\t\t\t\tBoil 5 minutes.<br \/>\n\t\t\t\t\t\tFor the soup<br \/>\n\t\t\t\t\t\tSoak the beans the night before. Discard the soaking water and cook the beans in a pressure cooker (1 min) along with 1 litre of vegetable or chicken broth, bay leaf, \u00bd onion and ground rosemary.<br \/>\n\t\t\t\t\t\tMeanwhile, chop fine 1 onion with garlic. Wash and chop all the vegetables and chop the tomatoes.<br \/>\n\t\t\t\t\t\tSaut\u00e9 the onion with the garlic in a large flat pan with 1 cup of olive oil for 5 minutes, then the remaining vegetables and saut\u00e9 for 20 minutes over very low heat. Add salt.<br \/>\n\t\t\t\t\t\tStrain the broth where the beans were cooked and add the vegetable sofrito to the pan. Add the sliced Parmesan, parsley, pepper and basil. Bake for 15 minutes.
