A clear example is the influence of the alfajores in Andalusian cuisine, although they are not the recipe presented this week. AS shown in the ingredients that are a part of this delicacy, pistachios, spices and especially sugar and honey are essential touches that define the development of a unique preparation know for its sweet taste and attention to detail in preparation and presentation. They are true works of art that come from the southern and eastern Mediterranean and leave no one that tries them indifferent. It is generally said that the Arab baked goods arise from the convergence of an influx of cultures that occurred in ancient times, and that its function is closely linked to a strong aphrodisiac that permeated the old popular wisdom. But certainly the use of honey as the backbone of this rich Arab recipe also finds its purpose in the long tradition in Arab food culture of this natural food as a therapeutic product, to be one of the most recommended remedies of prophetic medicine. It is somehow not surprising to think that there is an interesting relationship between confectionary and pastry of yore and that pharmaceutical forms emerged from medical recommendations.<\/p>\n<p>4 servings<\/p>\n<p>100 g blanched almonds<br \/>\n\t\t\t\t\t\t100 g white sugar<br \/>\n\t\t\t\t\t\t1  medium egg yolk<br \/>\n\t\t\t\t\t\t200 g orange blossom honey<br \/>\n\t\t\t\t\t\t100 g shelled pistachios<br \/>\n\t\t\t\t\t\t4 tbsp orange blossom water<br \/>\n\t\t\t\t\t\t  a pinch of ground cinnamon<br \/>\n\t\t\t\t\t\t10 ml olive oil<br \/>\n\t\t\t\t\t\t100 ml olive oil for frying<br \/>\n\t\t\t\t\t\t  water<br \/>\n\t\t\t\t\t\t  salt\n\t\t\t\t\t\t<\/p>\n<p>Grind the almonds and mix with sugar, cinnamon and 2 tablespoons orange blossom water.<br \/>\nMake a volcano with the semolina flour, leaving a hole in the center. Add the saffron dissolved with the remaining orange blossom water, a pinch of salt and 1 dl olive oil.<br \/>\nAdd enough water to knead to form a dough. Divide dough into 2 parts and give shape them into rolls.<br \/>\nSpread a portion of the dough onto a work surface with a thickness of about 1.5 cm. Spread over the almond preparation and cover with the remaining batter.<br \/>\nCut diagonally forming diamonds and pass them through the beaten egg yolk.<br \/>\nFry in a pan with plenty of hot olive oil until golden and crispy and let them drain on paper towels.<br \/>\nSlightly warm the honey in a double boiler or microwave and dip the fried pasties so they are fully coated. Arrange on a serving dish and garnish with chopped pistachios.<br \/>\nServe the pastries when cold.<\/p>\n<p>Semolina is the coarse purified wheat middlings of durum wheat.
