Take a medium bowl and mix the cheeses, chives, parsley and thyme. Add the pepper flakes and a good drizzle of extra virgin olive oil.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Paso 3\">\n<div class=\"cooked-dir-content\">\n<p>Then place the phyllo sheets on a flat, dry and clean surface and, with a sharp knife, cut the phyllo sheets into 4 equal strips.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Paso 4\">\n<div class=\"cooked-dir-content\">\n<p>Next, on each strip of dough we spoon 1 and a half tablespoons or so of the filling along the edge that is closest to you and roll up nicely, tucking the sides in.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Paso 5\">\n<div class=\"cooked-dir-content\">\n<p>Finally, with a brush we paint the rolls with olive oil and put them in the oven for 10 minutes on the middle rack.
