Clean the leeks by removing the first layer, the roots and the green part of the stem, then cut into slices. Clean the artichokes by removing the tough outer leaves,  and part of the central stem. Set aside two artichokes and cut them into thin slices, chop the rest and sprinkle with the juice of half the lemon. Wash, dry and chop the chives.<br \/>\nHeat margarine in a saucepan over low heat and poach the leeks, potatoes and artichoke hearts for 5 minutes. Add salt and pepper, cover with water and boil for 20 minutes. Add the walnuts, setting some aside for serving. Blend and pass through a sieve.<br \/>\nHeat olive oil in a pan and fry the artichoke slices until golden and crisp, then drain and set aside on paper towels. Mark the seasoned scallops on the grill without cooking too long so they are tender.
