Indeed, the preparation of a good dessert fits perfectly with culinary trends introduced by the revolutionary approach, both in content and form, which brought the nouvelle cuisine. The elegance and simplicity that defines pears with raspberries, adds another reason for this gastronomic proposal to be one of the choices selected by famous chefs that broke out on the scene in France during the last quarter century. The simplicity of its ingredients (pears, raspberries, vanilla and almonds), combined with an excellent use of originality in their presentation, an account of the culinary possibilities that a staple of the traditional food culture of the Mediterranean people can enjoy. It is said that the raspberry appeared around the time of Jesus Christ and its consumption first peaked on Mount Ida, in Greece, at the hands of the Trojans. Although there are other theories that locate the origin of the raspberry in Asia or North America, it appears that the name as we know it come from the French framboise. On the other hand, the pear has its origins in Europe where it goes back to a couple of millennia before Christ, becoming a favourite fruit among the Greeks, but wasn’t always a great accepted dessert among wealthier classes. This week’s proposal invites us to blend the traditional simplicity with the originality of French good taste.

4 ripe pears
500 g fresh or frozen raspberries
500 ml vanilla ice cream
4 tbsp toasted almonds

An hour before preparing the dessert, place the glasses in the freezer.
Coarsely chop the toasted almonds.
