 1 Chopped Sobrarbe hen
 1 Onion (PDO Onion from Fonts d'Ebre)
 Almonds
 Organic flour
 2 Eggs C'alial
 White wine (PDO Somontano)
 Meat broth
 Salt
 Parsley
 Extra virgin olive oil (PDO Oil from Lower Aragon)

In a frying pan with olive oil, chop the onions and fry, when they are done, we will put it in a mortar without oil.

In that same oil we will fry the previously salted and floured chicken. Once everything is cooked, add the white wine and let it evaporate in the pot.

Add a little water and cook for a few minutes at low heat.

Crush the onion and almonds together with the egg yolks, add it to the hen, cover the pot and cook for 25 to 30 minutes at low heat.

To serve it and decorate it, cut the egg whites into small pieces and add them to the hen on top.
