Rosemary Chicken

 1 1.5 kg chicken
 1 lemon
 1 sprig fresh rosemary
 10 ml dry white wine
 2 tbsp olive oil
 pepper

Clean the chicken, wash and dry thoroughly.
Salt and pepper the chicken inside and out. Wash the lemon, dry and place it inside the chicken.

Place chicken in a baking dish with 2 tablespoons olive oil. Sprinkle with chopped rosemary and place in a preheated oven at 180ºC. Back for 1 hour and 10 minutes. Turn over halfway through cooking.

Remove chicken from the oven and recover the cooking juices.

Heat the wine in a small saucepan and simmer for 2 minutes to reduce slightly. Then add the cooking juices and remove the sauce from heat.

Serve chicken immediately with the sauce in a separate bowl.
