 1 kg of organic farming potatoes

Clean the borage and peel the potatoes.

Steam the potatoes and make a puree adding a little oil. Reserve in a pastry bag to form the volcano.

Scald the borage in boiling water, let it drain for a moment and place it in the center of the volcano.
