Batem els ous en un bol. Estenem la farina en un plat. Passem les patates per l\u2019ou batut i farina. Les fregim breument en una paella amb oli d\u2019oliva i les escorrem sobre un plat folrat amb paper absorbent de cuina. Afegim el safr\u00e0 i el vi. Piquem la ceba i les posem a pochar. Salpebrem. Afegim 1 cullerada de farina i ofeguem breument. Afegim la picada i barregem b\u00e9. Col\u00b7loquem les patates i les cobrim amb el brou. Cuinem a foc suau durant 15-16 minuts, remenant de tant en tant. Rectifiquem de sal.
