{"id":3509,"date":"2017-04-29T08:16:49","date_gmt":"2017-04-29T08:16:49","guid":{"rendered":"https:\/\/dietamediterranea.com\/?post_type=cp_recipe&#038;p=3509\/"},"modified":"2017-12-12T01:43:48","modified_gmt":"2017-12-12T01:43:48","slug":"tallarines-fins-amb-cloisses","status":"publish","type":"cp_recipe","link":"https:\/\/dietamediterranea.com\/ca\/recipes\/tallarines-fins-amb-cloisses\/","title":{"rendered":"Tallarines fins amb clo\u00efsses"},"content":{"rendered":"<\/p>\n<p>per a 4-6 persones<\/p>\n<p>2  dents d&#8217;all, pelats<br \/>\n\t\t\t\t\t\t  l\u00edquid de cocci\u00f3 de les clo\u00efsses<br \/>\n\t\t\t\t\t\t  entre 150 i 200 g de carn de clo\u00efssa, tallades si s\u00f3n grans<br \/>\n\t\t\t\t\t\t  entre 2 i 4 filets d&#8217;anxova, laminats o 1\/2 culleradeta de pasta d&#8217;anxova<br \/>\n\t\t\t\t\t\t  sal, si cal<br \/>\n\t\t\t\t\t\t3 tbsp d&#8217;oli d&#8217;oliva<br \/>\n\t\t\t\t\t\t  un bon pessic de pebre negre fresca<br \/>\n\t\t\t\t\t\t400 g tallarines fins (tagliatelle) o espaguetis o una altra pasta fina<br \/>\n\t\t\t\t\t\t1 tbsp julivert tallat fi o 3 o 4 fulles d&#8217;alf\u00e0brega o menta, tallades fines\n\t\t\t\t\t\t<\/p>\n<p>Daurar l\u2019all amb l\u2019oli, afegir el l\u00edquid de les clo\u00efsses (amb mitja tassa \u00e9s suficient per a gaireb\u00e9 tots els gustos), les clo\u00efsses i les anxoves. Remenar, afegir el pebre, i, si cal, salar al gust.<br \/>\nMentrestant, bullir la pasta com sempre, esc\u00f3rrer i passar a un pot pre-escalfat.<br \/>\nAfegir la salsa de clo\u00efsses calenta i les herbes, remoure i servir al moment. Els italians creuen que seria un pecat posar formatge a aquest plat o altres plats de pasta amb peix.<\/p>\n<p>Agafar suficients clo\u00efsses amb closca per tenir entre 150 i 200 g (gaireb\u00e9 una tassa plena) de carn. Netejar les closques amb un raspall dur abans de posar-les en una olla amb una tassa d\u2019aigua bullint i una cullerada sopera d\u2019oli d\u2019oliva. Quan s\u2019obren les closques, abocar l\u2019olla en un colador sobre un plat per guardar el l\u00edquid. Retirar les clo\u00efsses de les closques i reservar.
