Zucchini with mint

1Cut the zucchinis, without peeling, lengthwise, as you would prepare carrot sticks, each “stick” 3 to 5 centimetres long.

2Simmer in salted water until tender, being careful not to overcook them.

3Drain and place them in a serving dish. Add the olive oil and mint leaves while the zucchini is still hot, mixing well and adding more salt if desired.

4Chill and serve cold.


3 or 4 zucchinis

2 tbsp olive oil

2 or 3 fresh mint leaves cut in small pieces
